Ingredients
  

  • 1.5-2 pounds boneless, skinless chicken breasts, cut into 1-inch cubes
  • 1 cup ranch dressing
  • 4-5 cloves garlic, minced
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Pinch of red pepper flakes optional

Method
 

  1. In a medium bowl, combine the ranch dressing, minced garlic, Parmesan cheese, salt, and pepper.
  2. Add the chicken cubes and toss to coat evenly.
  3. Cover the bowl and refrigerate for at least 30 minutes, or up to 4 hours.
  4. If using wooden skewers, soak them in water for at least 30 minutes before grilling.
  5. Preheat your grill to medium-high heat. Alternatively, preheat oven to 400°F (200°C) or air fryer to 375°F (190°C).
  6. Thread the marinated chicken cubes onto the skewers, leaving a little space between each piece.
  7. If grilling, brush the grill grates with olive oil to prevent sticking. Place the skewers on the grill and cook for about 8-10 minutes, turning occasionally, until the chicken is cooked through and lightly charred. The internal temperature should reach 165°F (74°C).
  8. If baking, line a baking sheet with parchment paper. Place the skewers on the baking sheet and bake for 15-20 minutes, or until the chicken is cooked through, flipping them halfway through. The internal temperature should reach 165°F (74°C).
  9. If air frying, place the skewers in the air fryer basket in a single layer (you may need to do this in batches). Cook for 8-10 minutes, flipping halfway through, until the chicken is cooked through. The internal temperature should reach 165°F (74°C).
  10. Remove the skewers from the grill (or oven/air fryer) and let them rest for a few minutes before serving.
  11. Serve immediately.

Notes

For best results, marinate the chicken for at least 30 minutes to allow the flavors to meld. To prevent wooden skewers from burning, soak them in water for at least 30 minutes before grilling. Serve these skewers with rice, quinoa, salad, or grilled vegetables. Leftovers can be stored in an airtight container in the refrigerator for up to 3-4 days. Reheat in the microwave, oven, or air fryer until heated through. For a spicier kick, add a pinch of cayenne pepper or a dash of hot sauce to the ranch dressing.
