Ingredients
  

  • 4 cups diced seedless watermelon
  • 1/2 cup finely chopped red onion
  • 1 jalapeño, seeded and minced
  • 1/4 cup chopped fresh cilantro
  • 2 tablespoons lime juice, freshly squeezed
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt, or to taste
  • 1/4 teaspoon black pepper, or to taste

Method
 

  1. Dice the watermelon into small, bite-sized pieces and place in a large bowl.
  2. Finely chop the red onion. For a milder flavor, soak it in cold water for 10 minutes after chopping, then drain well.
  3. Carefully seed and mince the jalapeño. Use gloves if sensitive to spicy peppers. Wash hands thoroughly after handling.
  4. Roughly chop the fresh cilantro.
  5. Add the chopped red onion, minced jalapeño, and chopped cilantro to the bowl with the diced watermelon.
  6. Drizzle the lime juice and olive oil over the mixture.
  7. Season with salt and pepper to taste.
  8. Gently toss all the ingredients together until well combined, being careful not to mash the watermelon.
  9. Cover the bowl and refrigerate for at least 30 minutes to allow the flavors to meld. For best results, chill for 1-2 hours.
  10. Serve chilled with tortilla chips, grilled meats, fish, or as a topping for tacos or salads.

Notes

Choose a ripe, juicy watermelon for the best flavor. Control the heat by adjusting the amount of jalapeño. For a creamier texture, add diced avocado. Other variations include adding mango, black beans and corn, or crumbled feta cheese. Leftover salsa can be stored in an airtight container in the refrigerator for up to 3 days. Drain off any excess liquid before serving. Freezing is not recommended.
