Ingredients

  • 1 lb fresh okra, washed and sliced into 1/2-inch rounds
  • 1 cup buttermilk (or milk with 1 tbsp vinegar)
  • 1 cup all-purpose flour
  • 1/2 cup cornmeal
  • 2 tbsp Cajun seasoning
  • 1 tsp salt
  • 1/2 tsp black pepper
  • vegetable oil, for frying

Equipment

  • Mixing bowls
  • slotted spoon
  • dutch oven or deep pot
  • deep fry thermometer
  • wire rack and paper towels

Method

  1. Wash the okra and pat dry completely. Slice into 1/2-inch rounds.
  2. Soak okra in buttermilk for 30 minutes to 2 hours in the fridge.
  3. Mix flour, cornmeal, Cajun seasoning, salt, and black pepper in a shallow bowl.
  4. Dredge buttermilk-soaked okra in the flour mixture. Press lightly to coat.
  5. Heat 2 inches of vegetable oil in a deep pot to 350°F (175°C).
  6. Fry okra in batches, 2–3 minutes until golden and crispy. Don't overcrowd.
  7. Remove with slotted spoon and drain on wire rack or paper towels.
  8. Sprinkle with extra salt or Cajun seasoning. Serve immediately.

Notes

For less heat, reduce the cayenne in your Cajun blend. Great served with spicy ranch or remoulade sauce. To reheat and restore crispiness, use an oven or air fryer instead of microwaving.
