- In a bowl, combine cubed chicken, 2 tbsp olive oil, garlic, lemon zest and juice, chopped herbs, salt, pepper, and red pepper flakes. Toss to coat and marinate for at least 30 minutes (up to overnight).
- Heat 1 tbsp olive oil in a skillet over medium-high heat until hot.
- Add chicken in a single layer. Sear for 5–7 minutes per side, turning once, until golden and fully cooked (internal temp 165°F/74°C).
- Remove skillet from heat. Add a squeeze of lemon juice and optional butter. Toss to coat and finish with more herbs.
- Serve hot. Pairs well with salad, rice, wraps, or pasta!
Notes
For extra depth, let the chicken marinate overnight. Searing in a hot skillet gives the best golden crust. Add a pat of butter at the end for richness, or red pepper flakes for a kick!
