Ingredients
  

  • 500 g boneless skinless chicken breast or thighs, cut into 1-inch cubes
  • 3 tbsp olive oil, divided
  • 4 cloves garlic, minced
  • 2 tbsp fresh lemon juice
  • 1 tsp lemon zest
  • 1 tbsp chopped fresh rosemary
  • 1 tbsp chopped fresh thyme
  • 1 tbsp chopped fresh oregano
  • 1 tsp kosher salt (or to taste)
  • 1/2 tsp black pepper
  • 1/4 tsp red pepper flakes (optional)
  • 1 tbsp unsalted butter (optional, for finishing)

Method
 

  1. In a bowl, combine cubed chicken, 2 tbsp olive oil, garlic, lemon zest and juice, chopped herbs, salt, pepper, and red pepper flakes. Toss to coat and marinate for at least 30 minutes (up to overnight).
  2. Heat 1 tbsp olive oil in a skillet over medium-high heat until hot.
  3. Add chicken in a single layer. Sear for 5–7 minutes per side, turning once, until golden and fully cooked (internal temp 165°F/74°C).
  4. Remove skillet from heat. Add a squeeze of lemon juice and optional butter. Toss to coat and finish with more herbs.
  5. Serve hot. Pairs well with salad, rice, wraps, or pasta!

Notes

For extra depth, let the chicken marinate overnight. Searing in a hot skillet gives the best golden crust. Add a pat of butter at the end for richness, or red pepper flakes for a kick!
