Ingredients
  

  • 4 cups cubed watermelon
  • 2 cups sliced peaches
  • 1/2 cup thinly sliced red onion
  • 1/4 cup crumbled feta cheese optional
  • 1/4 cup fresh mint leaves, chopped
  • 3 tablespoons lime juice
  • 2 tablespoons olive oil
  • 1 tablespoon honey
  • 1/2 teaspoon lime zest
  • Pinch of salt
  • Pinch of pepper

Method
 

  1. Cut the watermelon into bite-sized cubes, about 1-inch in size. Remove any seeds you find.
  2. Wash the peaches and slice them into thin wedges. If you're using very ripe peaches, handle them gently to avoid bruising.
  3. Thinly slice the red onion. If you're sensitive to the strong flavor of raw onion, soak the slices in cold water for 10 minutes, then drain well.
  4. In a large bowl, gently combine the cubed watermelon, sliced peaches, and thinly sliced red onion.
  5. In a small bowl, whisk together the lime juice, olive oil, honey, lime zest, salt, and pepper until well combined. It should look slightly emulsified.
  6. Pour the dressing over the fruit mixture and gently toss to coat. Be careful not to overmix, as this can make the watermelon mushy.
  7. If using, sprinkle the crumbled feta cheese and chopped fresh mint leaves over the salad.
  8. Cover the salad and refrigerate for at least 30 minutes to allow the flavors to meld. This also helps to keep the salad cool and refreshing. Serve chilled and enjoy!

Notes

For the best flavor, use ripe, in-season peaches and watermelon. To prevent the salad from becoming soggy, add the dressing just before serving. You can also serve the dressing on the side. For a spicy kick, add a pinch of red pepper flakes to the dressing. Store leftover salad in an airtight container in the refrigerator for up to 2 days, but be aware that the watermelon will release liquid over time. Consider adding toasted nuts like almonds or pecans for extra crunch and flavor.
