- Heat a large skillet over medium heat.
- Add the ground beef (or your choice of protein) and cook, breaking it up with a spoon, until browned.
- Drain off any excess grease.
- Add the diced onion and garlic (and bell pepper, if using) to the skillet and cook for 2-3 minutes, until softened and fragrant.
- Stir in the taco seasoning and water. Bring to a simmer and cook for 5-7 minutes, or until the sauce has thickened slightly.
- Taste and adjust seasoning as needed. Add a pinch of salt and pepper if you feel it needs it.
- In a bowl, place a generous amount of cooked rice.
- Top the rice with the cooked taco meat mixture.
- Add your desired toppings: shredded cheese, diced tomatoes, shredded lettuce, sour cream, salsa, guacamole, black olives, corn, jalapeños, cilantro, and a squeeze of lime juice.
- Serve immediately and enjoy!
Notes
For an extra burst of flavor, use cilantro-lime rice. You can make your own taco seasoning by combining chili powder, cumin, paprika, garlic powder, onion powder, oregano, salt, and pepper. Adjust the ratios to your liking. For a vegetarian option, use seasoned black beans or tofu crumbles instead of ground beef. Store leftover taco meat and rice separately in airtight containers in the refrigerator for up to 3 days. Assemble the bowls just before serving to prevent the rice from becoming soggy. For a spicier bowl, add diced jalapeños, a dash of hot sauce, or a drizzle of sriracha mayo.
