  • 4 ounces bittersweet chocolate, finely chopped
  • 2 ounces cream cheese, softened
  • 1 teaspoon vanilla extract
  • teaspoon salt

Method
 

  1. In a medium saucepan, whisk together the heavy cream, whole milk, and granulated sugar until the sugar is mostly dissolved.
  2. Whisk in the cocoa powder until fully incorporated and there are no lumps.
  3. Place the saucepan over medium heat and bring the mixture to a simmer, stirring constantly. Be careful not to let it boil.
  4. Remove the saucepan from the heat and add the finely chopped bittersweet chocolate. Let it sit for a minute to soften, then whisk until the chocolate is completely melted and the mixture is smooth and glossy.
  5. Add the softened cream cheese to the chocolate mixture and whisk until fully incorporated and the mixture is smooth and creamy.
  6. Stir in the vanilla extract and salt.
  7. Pour the chocolate mixture into a bowl, cover it with plastic wrap (pressing the wrap directly onto the surface to prevent a skin from forming), and refrigerate for at least 4 hours, or preferably overnight.
  8. Pour the chilled chocolate mixture into your ice cream maker and churn according to the manufacturer's instructions (usually about 20-25 minutes). The ice cream should be thick and creamy, with a soft-serve consistency.
  9. Transfer the churned ice cream to an airtight container and freeze for at least 2 hours to harden for a more scoopable texture.
