- In a medium saucepan, whisk together the heavy cream, whole milk, and granulated sugar until the sugar is mostly dissolved.
- Whisk in the cocoa powder until fully incorporated and there are no lumps.
- Place the saucepan over medium heat and bring the mixture to a simmer, stirring constantly. Be careful not to let it boil.
- Remove the saucepan from the heat and add the finely chopped bittersweet chocolate. Let it sit for a minute to soften, then whisk until the chocolate is completely melted and the mixture is smooth and glossy.
- Add the softened cream cheese to the chocolate mixture and whisk until fully incorporated and the mixture is smooth and creamy.
- Stir in the vanilla extract and salt.
- Pour the chocolate mixture into a bowl, cover it with plastic wrap (pressing the wrap directly onto the surface to prevent a skin from forming), and refrigerate for at least 4 hours, or preferably overnight.
- Pour the chilled chocolate mixture into your ice cream maker and churn according to the manufacturer's instructions (usually about 20-25 minutes). The ice cream should be thick and creamy, with a soft-serve consistency.
- Transfer the churned ice cream to an airtight container and freeze for at least 2 hours to harden for a more scoopable texture.

Notes
For the best flavor and texture, use high-quality chocolate and Dutch-processed cocoa powder. Make sure to chill the mixture thoroughly before churning to ensure a smooth and creamy ice cream. Store the ice cream in an airtight container in the freezer for up to 2 weeks. For a richer flavor, try adding a tablespoon of coffee liqueur or a pinch of cinnamon to the mixture before churning.
