- Preheat oven or air fryer according to the french fries package directions.
- Spread the frozen french fries in a single layer on a baking sheet.
- Bake or air fry until golden brown and crispy, flipping halfway through.
- While the fries are cooking, cook the bacon until crispy using your preferred method (pan-fried, oven-baked, or microwaved). Let cool slightly and then crumble into small pieces.
- If making homemade cheese sauce, melt the butter in a saucepan over medium heat.
- Whisk in the flour and cook for 1 minute, stirring constantly, to form a roux.
- Slowly whisk in the milk until smooth.
- Bring to a simmer, stirring constantly, until the sauce thickens.
- Remove from heat and stir in the cheddar cheese, salt, and garlic powder until the cheese is melted and smooth.
- Transfer the cooked fries to a serving platter or large bowl.
- Drizzle the cheese sauce evenly over the fries.
- Sprinkle the crumbled bacon and shredded cheddar cheese evenly over the top of the fries and cheese sauce.
- For extra gooeyness, optionally pop the fries under the broiler for 1-2 minutes until the cheese is melted and bubbly. Watch carefully to prevent burning.
- Garnish with sliced green onions, sour cream, and sliced jalapeños (if desired).
- Serve immediately and enjoy!
