  • 4 ounces feta cheese, block in brine preferred, crumbled
  • 1/4 cup thinly sliced red onion
  • 1/4 cup fresh mint, roughly chopped
  • 1/4 cup fresh basil, roughly chopped
  • 3 tablespoons extra virgin olive oil
  • 2 tablespoons fresh lime juice
  • 1/4 teaspoon salt, or to taste
  • 1/4 teaspoon black pepper, freshly ground
  • 2 tablespoons balsamic glaze, optional

Method
 

  1. Prep the Watermelon: Cut the watermelon into bite-sized cubes, about 1-inch in size. Be sure to remove any seeds that you might find. Place the cubed watermelon in a large bowl.
  2. Prepare the Red Onion: Thinly slice the red onion. If you want to mellow the onion's bite, soak the slices in a bowl of ice water for 10 minutes, then drain well.
  3. Crumble the Feta: Crumble the feta cheese over the watermelon. You can use your fingers or a fork to break it into smaller pieces.
  4. Chop the Herbs: Roughly chop the fresh mint and basil. Add them to the bowl with the watermelon and feta.
  5. Make the Dressing: In a small bowl, whisk together the olive oil, lime juice, salt, and pepper.
  6. Dress the Salad: Pour the dressing over the salad and gently toss to combine. Be careful not to overmix, as the watermelon can become mushy.
  7. Drizzle with Balsamic Glaze (Optional): If using, drizzle balsamic glaze over the salad just before serving.
  8. Chill and Serve: For the best flavor, chill the salad for at least 15 minutes before serving. This allows the flavors to meld together.
