Notes
For best results, use a ripe, seedless watermelon. To mellow the flavor of the red onion, soak the slices in ice water for 10 minutes before adding to the salad. The vinaigrette can be made up to 2 days in advance and stored in the refrigerator. Assemble the salad just before serving to prevent the watermelon from becoming soggy.
