- Dice the watermelon into small, even pieces (about 1/4-inch) and drain any excess juice. Place the diced watermelon in a medium bowl.
- Finely dice the red onion.
- Carefully mince the jalapeño, removing the seeds and membranes if you prefer a milder salsa. Be sure to wash your hands thoroughly after handling jalapeños!
- Chop the cilantro finely.
- Add the diced red onion, minced jalapeño, and chopped cilantro to the bowl with the watermelon.
- Drizzle the lime juice and olive oil over the watermelon mixture.
- Season with salt and pepper to taste. Start with a small amount and add more as needed.
- Gently toss all the ingredients together until they are well combined. Be careful not to mash the watermelon.
- Cover the bowl and refrigerate for at least 30 minutes to allow the flavors to meld. This step is crucial for developing the best flavor.
- Serve chilled with your favorite tortilla chips or as a topping for grilled meats or fish.
Notes
For best results, use a ripe, sweet watermelon. Adjust the amount of jalapeño to your spice preference. Don't overmix the salsa to prevent the watermelon from becoming mushy. Chill the salsa for at least 30 minutes to allow the flavors to meld. Store leftover salsa in an airtight container in the refrigerator for up to 2 days, but drain any excess juice before serving. For a variation, consider adding diced mango, avocado, or cucumber. Crumbled feta cheese or chopped fresh mint are also delicious additions.
